Observed temporary handwash station equipped with a 2 gallon bucket of cold potable water for handwashing above a 4 gallon wastewater container. Hand washing facilities shall include the following at a minimum: 5 gallon insulated container with a free/continuous flowing spigot for potable water; water at a temperature of at least 38°C (100°F), 5.75 gallon container to hold wastewater, soap, and paper towels. Per operator, their 5 gallon container had broke and they were using the smaller one temporarily. Corrective Action: Correct prior to next routine inspection.

MCEHC Chap. 8, Sec. 3, Reg. 10g, 11g - Hand washing facilities shall include the following at a minimum: 5 gallon insulated container with a free/continuous flowing spigot for potable water; water at a temperature of at least 38°C (100°F), 5.75 gallon container to hold wastewater, soap, and paper towels. Enough potable water shall be available in the establishment for food preparation, cleaning and sanitizing utensils and equipment and for handwashing. A heating facility capable of producing enough hot water for these purposes shall be provided on the premises.

Advised operator that all time/temperature control for safety (TCS) foods must cold hold under 41*F. The person in charge (PIC) explained the food had been set out in the ice bin an hour before the inspection. Advised operator these items could hold hold better submerged in more ice but should be monitored for temperature control.
