Observed grilled onions and jalepenos on steam table with an ambient temperature of 110-118*F. Person in charge stated cook placed food and turned on unit within one hour prior to inspection. Steam table water low and at an ambient temperature of 120*F and rising. Cook placed foods on grill to reheat to 165*F before placing back in steam table at a temperature of 150*F. Recommended checking water levels and ensuring a minimum temperature of 135*F on steam table before placing food in unit. Food must have a minimum temperature of 135*F or 165*F if reheating, before placing in hot steam table. PRIORITY VIOLATION-3-501.16(A)(1) - Priority: Time/Temperature Control for Safety Food, Hot Holding. Observed raw beef, cheese, chopped cabbage in cold holding unit with an internal temperature ranging 48-57*F. Person in charge stated cook placed food in unit from commissary within one hour prior to inspection. Cook removed all items and placed on ice in refrigerator in commissary for quick cooling to 41*F. Recommended keeping foods on ice during prep, organization an transport to ensure proper cold holding temperatures. PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Dear Permit Holder: An inspector for the Maricopa County Environmental Services Department (MCESD) has been unable to access your Mobile Food Establishment, to conduct an inspection. The inspector has also made attempts to contact you by phone and/or email to determine when and where the Mobile Food Establishment will be in operation so they may conduct an inspection. At this time, you have failed to return their phone calls or respond to their emails and have not allowed them access to inspect fully your Mobile Food Establishment.Please be advised that Chapter I of the Maricopa County Environmental Health Code states: REGULATION 3. Responsibilities – Right of Inspection b. No person shall refuse to allow the Department to inspect fully any and all premises or facilities at any reasonable time, and no person shall molest or resist the Department in the discharge of its duties whether in inspections for application approval or for the enforcement of this Environmental Health Code. REGULATION 7. Suspension and Revocation of Permits b.
