Observed pork for shredded pork menu item in refrigerator at 53 - 58*F. Cold hold of food is to be 41*F or lower. As per the person in charge, the pork was prepared the day before and cooled at commissary. Owner of business discarded product at time of site visit. Advised staff to monitor cold hold temperatures with metal stem thermometer prior to starting operations. May also choose to pack cold hold items in Ice when traveling to site. Corrective Action: Corrected at time of inspection.

Observed the person in charge wearing clean gloves to prepare ready to eat food without washing hands after working on plumbing at the hand wash station. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. The PIC washed hands during this inspection. Corrective Action: Correct at once.

Discussed with operator to let myself or someone in the department know of new location and days/times of operation once switch is made. Also sent operator via email commissary template and told operator to fill it out and send it back with valid commissary to switch to different commissary.
