Inspector's notes

Observed macaroni salad, shredded lettuce, tuna, imitation crab, cut tomatoes, cabbage, and raw shrimp ranging from 47*F to 89*F in the make-line unit. Ambient temperature was 67.6*F using min/max thermometer. Also, observed cooked chicken, raw beef, and cooked beef in the reach-in unit ranging from 50*F to 60*F. Ambient temperature was 58.6*F using min/max thermometer. PIC stated all food items came from the walk-in and were placed in the unit at approximately 3:00pm, time of inspection was approximately 4:30pm. PIC will stop serving food and discard all TCS food items at 7:00pm. PIC stated the units did not get turned on until they arrived at destination. Corrective Action: Corrected at time of inspection.
