Inspector's notes

Operator was unable to provide commissary logs at time of inspection. Informed operator that a commissary log is required to be filled out daily when operating and whenever the commissary is visited. PIC stated that they have two commissary kitchens they operate out of. One for grey water disposal and the other for food storage and preparation. Informed PIC that separate logs would be required for each commissary location. Logs must be maintained onsite for at least 30 days. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 5b - Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Addl Notes: Operator provided two commissary agreements for two different locations at time of inspection. One has been signed within the last calendar year and the other was signed in 2022. One kitchen is a permitted commissary kitchen where the PIC stated they dispose of grey water and the other is a restaurant PIC stated is used for the three-compartment sink and prep. Informed PIC that all commissary agreements must be signed within the past calendar year. Informed PIC that all commissary kitchens must be permitted as such, provide the current commissary agreement prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
