Discussed with the person in charge that a certified food manager is required to be on site at all times during operations. Corrective Action: Correct prior to next routine inspection. Observed bag of cooked chorizo located in a reach-in refrigerator date-marked as being prepared on 10/21, more than 7 days prior to the date of inspection. Ready-To-Eat/Time, Temperature Control for Safety foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). The manager voluntarily discarded the food at the time of inspection. Corrective Action: Corrected at time of inspection.

Internal temperature of 113*F for grilled chilies and roasted onions stored on food trays on top of hot holding unit. Per operator, grilled vegetables are stored at room temperature using time as a public health control and discarded after 4hours. Roasted vegetables did not have a time stamp marked on container and 3hours had passed. Operator was instructed to discard (~1lb)grilled vegetables and provide time stamp for all food items using time as a public health control. Corrective Action: Corrected at time of inspection.
