Establishment was serving hibiscus and pineapple aguas frescas from dispensers by opening the lid and ladling them into cups. All food service must be conducted inside the Mobile Food Type III unit. Person in charge (PIC) instructed employee to move the containers into the trailer during the inspection. Corrective Action: Corrected at time of inspection.

No sanitizer present on site for ware-washing or the sanitization of food contact surfaces. Food-contact surfaces must be properly sanitized after washing and rinsing, and all food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC retrieved chlorine sanitizer and food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

Per operator, unit visited commissary once per every 5 days of service (once a week). Informed operator mobile units must report to commissary at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. PIC was instructed to reflect increased frequency of commissary visits on commissary visits log. Corrective Action: Correct at once.
