Inspector's notes

Observed an employee grab raw fish using gloves, disposed of their gloves but proceeded to glove back up and work with bread before washing their hands. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Went to wash hands at beginning of inspection and in handwashing station was a to-go container, cleaning spray and soap. Discussed with operator to keep handwashing station clear at all times. Observed meat near griddle and temperature measured at 70*F. Asked operator about the meat. Per operator the meat had been cooked and cooled at the commissary kitchen, then put in hot-holding equipment on the drive to location. Discussed with operator that items need to be kept at 135*F at all times. Meat was re-heated on the griddle to 165*F and placed in hot-holding equipment. Correct By: Corrected At Time Of Inspection

Asked operator how water was getting into compartments and per operator they were filling it manually. Discussed with operator that faucet needs to reach all three compartments and will need to replaced. Please replace faucet prior to re-inspection within three business days.
