Inspector's notes

Observed an ambient air temperature of 45*F in the prep cooler when measured with a min/max thermometer. Inside the cooler, observed TCS foods holding between 47-48*F when measured with a probe thermometer, including: cut lettuce, cabbage, tomatoes, fried potatoes, red and green salsas, and shredded cheese. PIC stated all foods has been in the cooler less than 4 hours. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. e Observed cooling deep fried peppers inside the unit with internal temperatures ranging from 52-55*F when measured with a probe thermometer. Per PIC, the peppers were cooked 2-3 hours ago and placed in the unit to cool. Advised PIC all cooling should take place at their approved commissary and that performing cooling functions in this prep cooler may cause the unit to fail. Corrective Action: Corrected at time of inspection.

Advised PIC the foods may be cooked and hot held for the day or they may utilize time as a control for the peppers pending a written and approved policy. PIC stated foods would be hot held instead.
