Inspector's notes
Observed cooked onion and pepper in the salad bar style unit by the drinks outside the unit at 60*F. Per person in charge (PIC) the item was cooked and then placed in the unit on top of ice less than an hour prior to inspection. Discussed with PIC to add water to the ice to rapidly cool. Observed in the top part of the sandwich prep table in the mobile unit to hold an open bag of lettuce at 47*F and shredded mozzarella cheese at 45*F and sitting in a container with ice. Both items were filled above the fill line of the container. Per PIC the unit is turned off during transport and the items were placed in the unit right when it was turned on. Discussed with PIC to maintain the TCS items at 41*F through transport by means of ice, ice water, ice packs or adequate refrigeration. Also discussed to have refrigerator units drop down to 41*F before putting TCS items in the top or bottom of the sandwich prep table. The lettuce and mozzarella cheese were adjusted to not be above the fill line and placed in adequate refrigeration to rapidly cool. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS items shall be 41*F before being placed in the sandwich prep table or the salad bar. Corrective Action: Corrected at time of inspection.

MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.
