Observed large cylinder containers of cooked shrimp and octopus in reach in with an ambient temperature of 45-48*F. Person in charge stated food was cooked on mobile unit within 2 hours of inspection and is actively cooling. These complex/excessive steps (cooling) is only approved to be completed in a commissary or other permitted permanent food establishment. Person in charge to utilize commissary for future bulk prep and cooling. MCEHC Chap. 8, Sec. 3, Reg. 6d, 9d, 10e, 11d - Food preparation shall be simplified to reduce excessive steps where food may become contaminated. Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items. This prohibition does not apply to foods that have been prepared or packaged in permanent food establishments or commissaries meeting the requirements of this code.

Per Person in Charge ( PIC ) the hose line to the hot water had started to spray outside of mobile food truck immediately before inspection. PIC voluntarily stopped serving food at that time. Per Person in Charge (PIC) the tomatoes were left out of the prep table unit and placed back in there an hour prior to inspection. PIC moved the tomatoes to the reach-in refrigerator to rapidly cool at time of inspection. Discussed the importance of cooling TCS items in the reach-in refrigerator and that cooling shall not take place in the prep table. All TCS items shall be 41*F before being put into the prep table.
