Operator could not provide a commissary visit log at time of inspection. Advised operator a commissary visit log shall be recorded, kept on the Mobile Food Trailer, and made available upon request. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 5c - Mobile food establishments shall provide a commissary agreement to the Department upon request, at permit issuance or renewal, and as a part of the documents submitted during plan review for a new permit. Ice cream vendors that only sell or dispense individually packaged, commercially processed items are exempt from providing a commissary agreement. Addl Notes: The commissary agreement on file is expired. Please provide an updated commissary agreement. Corrective Action: Correct at once.

MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.

This establishment received a(n) A Grade and had 0 Priority, 0 Priority Foundation violations on this inspection.Of note: Establishment does not have a dedicated hot holding unit (i.e.) steam table. PIC stated they cook per order or batch cool and cool foods. No hot holding or cooling was observed at the time of inspection. Advised PIC to discontinue this practice and create a makeshift steamer on the flat top grill or purchase a dedicated steamer to keep batch prepped TCS foods at 135*F or above. Advised PIC that cooling onboard a Class 3 MF unit is operating above the scope of the permit and should be conducted at their commissary. Inspected at SPE-24-0365 AIA Track Meet at 1833 W Southern Rd, Mesa, AZ 85202.A copy of the report was emailed to the manager.No County legal action will result from this inspection.On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees.
