#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

During inspection, TCS food such as cooked meats, cooked salsas, cut tomatoes, cooked beans, and cut lettuce in the cold prep table had internal temperature from 49-52*F. The person in charge (PIC) stated they had just turned off the units for 10-15 minutes in order to connect the food truck to the electric grid. The PIC added ice to the cooler in order to cool down the food rapidly. The food items were observed to be cooling down by the end of the inspection and had internal temperatures of 45*F-47*F. The min/max thermometers were reading at 37*F at the end of the inspection. Discussed using metal containers to keep food cold.

A commissary log was not available during the inspection. The PIC stated the commissary log was left at home. Please have logs available prior to re-inspection. MCEHC Chap. 8, Sec. 3, Reg. 5c - Mobile food establishments shall provide a commissary agreement to the Department upon request, at permit issuance or renewal, and as a part of the documents submitted during plan review for a new permit. Ice cream vendors that only sell or dispense individually packaged, commercially processed items are exempt from providing a commissary agreement. Addl Notes: No commissary agreement was available during inspection. The PIC stated the commissary agreement was left at home. Please have a commissary agreement available prior to re-inspection.

This log shall be maintained using a Department approved format and maintained with the establishment at all times. Food preparation shall be simplified to reduce excessive steps where food may become contaminated. This prohibition does not apply to foods that have been prepared or packaged in permanent food establishments or commissaries meeting the requirements of this code.
