PIC did not have sanitization materials present at time on inspection for cutting boards and utensils as they reaching the 4th hour of use. As market was reaching it's close, PIC ceased use of materials in need of sanitization and packed them up for sanitization at the commissary. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. Corrective Action: Corrected at time of inspection.

Various cheesed and dairy spread at prep table observed being held on table without adequate refrigeration. PIC confirmed they were changing the cheeses out often (approximately every hour) and had done so roughly 30 minutes prior. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. All TCS foods being held under time as a control were properly time stamped at time of inspection.
