Inspector's notes

Observed raw seasoned chicken (56°F) and raw seasoned beef (53°F) both reporting above 41°F at time of inspection. PIC confirmed both items had been removed from refrigeration and placed on the unit within the past hour (40mins). The two reach in refrigerators for the beef and chicken were reporting at 57°F and 63°F, respectively. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning freezer unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Reach in refrigerators at driver's cabin (63°F) and near flat top grill (57°F) were both reporting an internal temperature above 41°F at time of inspection. All TCS items within were moved to alternate freezer unit during inspection. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection.

Per operator, the unit was in good working condition when they set up an hour prior to this inspection. Discussed that cold holding unit with TCS food has to be held at 41 degrees or less.
