Inspector's notes

Observed cut tomatoes (60*F) and cut lettuce (56*) in the refrigerator. Ambient temperature was 47.1*F using min/max thermometer. Person in charge (PIC) stated the tomatoes were prepared approximately 45 minutes prior to inspection. PIC placed tomatoes in the freezer on ice to rapid cool. The cut lettuce was prepared at 10:00am and was voluntarily discarded - see embargo form. Also, el pastor (86*F) in the freezer. PIC stated it was prepared 45 minutes prior to inspection and reheated it to 165*F and was then hot held. Corrective Action: Corrected at time of inspection.

Inspector's notes

Operator could not provide a commissary visit log for the commissary where food is being prepared at time of inspection. Advised operator a commissary visit log shall be recorded, kept on the Mobile Food Trailer, and made available upon request. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 5b - Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Addl Notes: Observed cooked frozen chicken in a ziploc bag in a tabletop prep fridge. Per person in charge the chicken was cooked at a commissary kitchen, My Kitchen. The commissary agreement on file does not apply for food preparation services. Discussed with person in charge that all food must be prepared in a permitted establishment and a commissary agreement is required. Please provide a commissary agreement prior to re-inspection. Corrective Action: Correct prior to re-inspection.

MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.

Per PIC, the pico had been in the cooler for less than 2 hours prior to the inspection. PIC added ice around the container for rapid cooling.
