Inspector's notes
Observed PIC take heads of lettuce out of a to-go bag with bare hands at the time of inspection. PIC then dawned gloves and prepared to cut heads of lettuce. Per PIC, heads of lettuce were already washed at the commissary and were RTE. Discussed the importance of preventing bare hand contact with ready-to-eat (RTE) foods with the person-in-charge (PIC). Bare hand contact is not approved with ready-to-eat (RTE) food items. RTE lettuce that was contacted by bare hands was discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
