Inspection made of facility.This establishment/operation has been evaluated and qualifies for the issuance of the permit.NOTE: Vissani homestyle refrigeration/freezer unit in food preparation area. Food permit is to have approved, commercial grade equipment throughout facility that is used for food production.Prior to next routine inspection, the following items shall be corrected:1: Owner notified inspector he will use mixer (Vevor) to hold prepared TCS product. Per owner, mixer currently holding at 47F. Mixer should be capable of holding items at 41F or Owner can institute a policy of time as a control. Provide a written policy If time as a control is utilized. Items under time as a control cannot be held for over 4 hours and must be discarded.2: All structural surfaces (i.e. floors, walls, and/or ceiling) shall be made of a smooth, durable, easily cleanable & non-absorbent material. The cab or driving portion of the vehicle shall be separated from the food preparation and serving area of the vehicle by a permanent solid wall partition or a door. If a screen door is installed, a minimum 16 mesh per square inch is required.6: Operator indicated he would put bagged ice in ice storage caddy. Ice storage caddy shall have separate outlet to the outside in order to prevent wastewater tank overflow.
