Cooked scrambled eggs on flat top grill found with internal temperature of 119*F. Cooked sausage in hot well (pan was placed on top of other pans, outside of the hot water) found with internal temperature of 109*F. PIC stated both items were made recently and will reheat them to 165*F before placing them back into hot holding. Please continue to monitor hot holding food items and ensure they are maintained above 135*F. ***2nd consecutive violation*** Corrective Action: Corrected at time of inspection.

Cooked sausage found in hot holding table with internal temperature of 94*F. The pan the sausage was in was elevated about 3-4 inches above the rest of the pans that were properly hot holding, which is probably why it had a lower temperature. PIC stated the sausage was cooked within the last hour and will reheat it over 165*F to continue hot holding it. Please ensure hot held TCS food items are maintained at 135*F or above. Corrective Action: Corrected at time of inspection.
