Upon further review, two metal drainboard shelves will be adequate. One shelf designated for clean dishes must be higher than the dirty dishes shelf to prevent contamination.>>>A process plan on how to sanitize the fresh water and waste water tanks must be provided.>>>A city letter stating this mobile food unit is approved to dump wastewater at the commissary must be provided.>>>The toilet fixture must be disabled or removed along with the black water tank.>>>Hot water measuring 100*F-110*F must be available.
