Cooked corn on the steam table was found with an internal temperature of 122*F-128*F. The PIC did not have a food probing thermometer to verify temperatures. The PIC stated the heat was lowered within the last 30 minutes because it was boiling. The PIC reheated the corn to 165°F at the time of inspection.

This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.

At the time of inspection, water at the hand wash sink came out from the faucet dark in color and black debris was observed in the basin of the sink. Per manager, the establishment was not in use for two weeks and the tanks were not flushed. Properly flush and sanitize the tanks prior to reinspection. Corrective Action: Correct prior to re-inspection.
