Observed chicken and beef patties stored at room temperature, 78*F to 81*. Per manager they were cooked at 8pm, three hours ago. Per manager they were not on time as control. Because the patties were stored at room temp the entire time, they were placed on time as control and must be discarded at 12am. Manager wrote down times for discarding. Inspector explained proper hot holding with manager.
