Inspector's notes

Observed food in in fridge by entry reporting between 49-52 degrees Fahrenheit. Upon taking the ambient temperature of the unit, interior reported at 50 degrees Fahrenheit. Exterior thermometer screen reported unit interior at roughly 39 degrees. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed PIC using sanitizer bucket for surfaces, but could not produce test strips to measure solution. concentration. PIC confirmed there were no sanitizer test strips on unit. Test strips are required for any sanitizers used with food contact surfaces. PIC was able to acquire a temporary supply of test strips at time of re-inspection. Corrective Action: Corrected at time of inspection.
