At time of inspection observed no hand soap available at the hand wash sink. Employee provided soap stored under the 3-compartment sink. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Corrected at time of inspection.

Observed cooked rice, beans, carne asada, beef patties, chicken and pork with internal temperatures ranging from 93*F-111*F located at the steam table. Per employee the items were placed on the steam table four hours prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS (time/temperature control for safety) foods must be maintained at 135°F or above. All TCS foods improperly hot held were embargoed at time of inspection. Corrective Action: Corrected at time of inspection.

At time of inspection observed sliced tomato, cheese and ham with internal temperatures between 52*F-56*F located at the top portion of the reach-in prep table. Per employee the food items were placed in the prep table four hours prior to inspection. Also observed a box of raw eggs under no temperature control stored next to the service window with an internal temperature of 71*F. Per employee the eggs were placed by the service window four hours prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Food items were embargoed at time of inspection. Corrective Action: Corrected at time of inspection.
