Observed establishment storing and serving hot holding cooked beef, and cheese sauce, and cold holding shredded cheese, diced tomatoes, red & green salsa from an unpermitted food truck adjacent to the Mobile Annual Event Food Establishment (permitted) booth set up. Discussed with PIC permitted requirements and forwarded information to Maricopa County Mobile Food Department. >>>>>Discussed with PIC Reduced Oxygen Packaging (ROP) requires a variance with Maricopa County. Provided documentation to assist with obtaining a variance or adjust procedures to not require a variance.

Inspector's notes

Observed no hand washing sink in booth set up. Per person in charge (PIC) the hand washing sink is in the food truck adjacent to the booth. Discussed hand washing shall occur after you handle raw meats, after you touch a barrier, after you take off gloves and before you putting on new gloves or any time contamination occurs. Discussed with PIC handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. A hand wash sink was made accessible at time of inspection. Corrective Action: Corrected at time of inspection.

Observed no commissary visit log available at time of inspection. PIC stated the last time commissary was visited was 2 days prior to inspection. Discussed with PIC that establishment should visit commissary on days when in operation. Corrective Action: Correct prior to next routine inspection.

MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.
