Observed a buildup of food debris inside the standing fridge. Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Corrective Action: Correct prior to next routine inspection.

MCEHC Chap. 8, Sec. 3, Reg. 5e - Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department.

Inspector's notes
At time of inspection, employees washing hands with hand sanitizer and in 3-compartment sink. Handwashing soap was provided and instructed employees to wash hands in designated handwashing sink. Educated employees on proper handwashing procedures. Discussed the importance of proper handwashing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Corrective Action: Corrected at time of inspection.

At start of inspection, water had run out of tanks, making handwashing sink unusable. Mobile food unit discontinued operation. Maintain all handwashing sinks available for use and with enough water available for full event. Provide update of working handwashing sink before re-inspection.
