Inspector's notes

Observed flex line installed connecting drainage of dirty water from to hand sink into wastewater tank. Eliminate flex line and use pipe and hoses to be corrosion resistant, and nonabsorbent and finished with a smooth interior surface. Operator is instructed remove flex line and opt for PVC pipe. Corrective Action: Correct prior to next routine inspection. Observed Pitcher Rinser installed on mobile food facility, the pitcher requires additional potable water tank capacity. The pitcher rinser is not required, this is optional. If planning to have a pitcher rinser, provide an additional freshwater and a wastewater tank that is 15% greater than the freshwater tank. Operator shall provide extra utensils and pitchers to be replaced every 4hours during operation.
