Educated staff on when hand washing is required, and hands must be washed at any time contamination occurs and when changing tasks. Staff corrected by washing hands. Observed the in used chlorine sanitizer located in the three-compartment sink, and in the sanitizer bucket, with concentration above 100 ppm. Discussed with operator that the chlorine sanitizer has to read between 50-100 ppm, for proper sanitizing of food contact surfaces and to also prevent toxic on food contact surfaces. Operator diluted concentration for correction. Corrective Action: Corrected at time of inspection.

Observed no test strips for the in used chlorine sanitizer solution sitting in the three-compartment sink and, in the sanitizer bucket. Per operator, they had forgotten the test strip at their fixed establishment. Discussed with the person in charge that, test strips are required for any sanitizers used with food contact surfaces. Chlorine sanitizer test strip was provided during the inspection. Corrective Action: Corrected at time of inspection.
