Observed cooked fries hot holding on the steam table and temping at 120 F. PIC stated that the fries were placed on the steam table since 11am. PIC voluntarily discarded the fries. Advised PIC that except during preparation, cooking, or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
