#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed pre-portioned ground beef in reach in fridge near entry holding at 50 degrees. PIC stated that the fridges had been turned off temporarily with food inside during transport, but had only been moved into unit from commissary cold storage roughly 1-1.5 hours prior. Alternate prep table had cooled faster and items inside were holding properly. Beef was moved to alternate refrigerator at time of inspection to cool more rapidly.
