Inspector's notes

Observed salsa portion cups inside a cooler on top of mostly melted ice reading at temperature of 63°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per PIC, all items in truck had been placed inside at 5am. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed burritos made with Chicarron (pork) and Discarda (various meats) holding at temperatures of 120*F and 122*F respectively. The hot-holding unit temperature gauge read at 140*F, but one of two glass doors was broken, allowing hot air to escape. Per PIC, burritos entered truck at 5am. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Since burritos had not reached 4 hour mark they were placed on Time as a Control, instructions for creating documentation were provided to the operator, and burritos were discarded at 9am (4 hours). Corrective Action: Corrected at time of inspection, burritos discarded at 4 hour mark.
