During time of inspection, did not observe commissary visit logs. Advised PIC to obtain and store signed and dated visit logs inside the unit. Mobile food establishments serving time/temperature control for safety foods shall maintain a log of visits to the approved commissary or food service establishment as required by this Department. This log shall be maintained using a Department approved format and maintained with the establishment at all times. The logs shall be maintained for a period of 30 days and should be available for review by the Department. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 5b - Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Addl Notes: During time of inspection, PIC stated the mobile unit only reports to the commissary twice per week, but operates six days a week. Advised PIC that mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Corrective Action: Correct prior to next routine inspection.

Observed cooked beans stored in the reach in cooler and temping 47 F. PIC stated the beans were stored in the reach in cooler since yesterday. PIC voluntarily discarded items. Advised PIC that Time/Temperature Control for Safety Foods (TCS) must be cold held at 41 F or below. Corrective Action: Corrected at time of inspection.

Observed the PIC's refrigerated medicine stored inside the reach in cooler next to food items without a proper container or label. PIC stored her medicine in a container with a proper label and above the food items in the reach in cooler. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed the mobile food unit connected to a fixed establishment's fresh water. Also, PIC stated that they discard their gray water in the sewer. PIC disconnected the fresh water and gray water during time of inspection. Advised PIC that they must obtain fresh water and discard gray water at their commissary every day during operation. Corrective Action: Corrected at time of inspection. PIC stated that they do not keep the logs on the unit. Advised PIC to obtain a signature each visit at the commissary and store the logs inside the unit. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 5b - Mobile food establishments shall operate from an approved commissary or other food service establishment as required by this Department, and shall report at least daily to such location for supplies, food storage, vehicle and equipment cleaning, waste disposal, and service operations. Addl Notes: During time of inspection, PIC stated that she only goes to the commissary once per month to throw away trash. Advised PIC that unit must be brought to the commissary at least once a day during operation to obtain supplies, fresh water, vehicle and equipment cleaning, waste disposal, and service operations.. Corrective Action: Correct prior to next routine inspection. MCEHC Chap. 8, Sec. 3, Reg. 6d, 9d, 10e, 11d - Food preparation shall be simplified to reduce excessive steps where food may become contaminated. Excessive steps may include, but are not limited to, cooking overnight without oversight, cooling, or cutting large volumes of food items. This prohibition does not apply to foods that have been prepared or packaged in permanent food establishments or commissaries meeting the requirements of this code. Addl Notes: During time of inspection, PIC stated that they cool food on the truck, freeze it, and carryover for the week. Observed the following Time/Temperature Control for Safety Foods (TCS) carried over: cooked pork, carne asada, turkey bacon, cheese, cut tomatoes, beans and beef broth. PIC voluntarily discarded the TCS food items. Advised PIC that no food shall be carried over and must be discarded at the end of each day. Corrective Action: Corrected at time of inspection.
