Observed Time/Temperature Control for Safety (TCS) foods cold holding in the reach in cooler and temping between 48-50 F, including cooked tripe and cooked salsa. Per PIC, the TCS items temped 39 F 3 hours ago, when they stored it in the reach in cooler inside the mobile food truck. PIC stored TCS items in an ice bath and temped at 41 F. Advised PIC that except during preparation, cooking, or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection. During time of inspection, observed no chlorine test strips only QAC sanitizer test. Per PIC, she only uses bleach and not QAC sanitizer. Advised PIC to obtain and store sanitizer test strips inside the unit. Test strips are required for any sanitizers used with food contact surfaces. Corrective Action: Correct prior to re-inspection 9/11/2026.
