Observed shredded jack cheese, queso fresco, shredded lettuce, sliced tomato, shredded cabbage and tomato mix cold holding in upright refrigerator at 45-47 degrees. Per PIC food was placed in the refrigerator greater than 2 hours prior. Informed PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed raw ground beef stored in refrigerated prep table on shelf above pre-prepared salsa and shredded cheese. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. One of the beef containers was observed with an unopened granola bar brought by staff set on top of the raw ground beef. Ground beef was discarded at time of inspection. Corrected at time of inspection.

Observed unopened granola bar sitting on top of raw ground beef in refrigerator, left accidentally by employee. Granola bar and ground beef were discarded at time of inspection. At time of inspection, employees had also ordered some coffee beverages and had them set on a empty rear prep table next to the prep sink behind the tortilla maker. Encouraged operator to create a designated space for employee items and food to prevent any accidental spills or contamination. Corrective Action: Correct prior to next routine inspection.
