Observed open prep cooler with boiled eggs, cooked rice, cooked noodles, dough balls, yogurt sauce, and tomato gravy at 45-50 degrees. Informed PIC all TCS foods must be held at 41 degrees or below. Instructed PIC to keep prep cooler doors closed when not in use. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
