Inspector's notes

Observed cooked beans in hot holding table holding at 120°F at time of inspection. Beans had been reheated within the past hour from cold holding and placed in the hot holding unit which was fully on. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

PIC confirmed water in freshwater tank was taken from onsite hose connection rather than commissary where they dumped their wastewater. Informed PIC that they must fill tanks with water from approved source/permitted food establishment and can only use the water connection for cleaning the nonfood contact surfaces and exterior of the unit. Corrective Action: Correct at once.
