Observed cooked cane asada and chicken with an internal temperature of 110F in food trayhs above hot holding trays. Person in charge states that items were cooked an hour ago, had person in charge reheat items back to 165F. Discussed making room for cooked items to be directly in hot holding unit and not just above. Corrective Action: Corrected at time of inspection.
