Inspector's notes

Observed cheese with an internal temperature of 49*F inside a cooler. Per person in charge the cheese was put in the cooler about 30 minutes prior to inspection. Instructed person in charge to add more ice and submerge the cheese in ice. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
