Inspector's notes

Internal temperature ranging between ( 51degrees F to 54 degrees F) for various foods (cut lettuce, eggs, cheese, cream) in two-door prep refrigeration unit. Per operator food items were placed in unit at 6am. It was determined that food had been stored in unit longer than 4hours and no loner safe for human consumption. Discussed to ensure all Time/temperature control for safety foods (TCS) shall be cold held at 41*F or below. Operator proceeded to discard TCS foods at time of inspection. Corrective Action: Corrected at time of inspection.

Observed brick and mortar seating area in same lot where mobile is parked for operation. Observed additional kitchenet space inside brick and mortar where three compartment sink is installed. Per operator equipment is new and was recently installed with plans to use space for ware washing and future cafe service. Discussed with operator an additional permit is required for a brick and mortar space. Operator also can discontinue services from this area. Corrective Action: Correct prior to next routine inspection.
