Inspector's notes

At time of inspection, observed cooked peppers hot holding on the steam well and temping 101 F. Per PIC, they were placed on the steam well 35-40 minutes ago. PIC reheated the cooked peppers to 165 F. Advised PIC that except during preparation, cooking, or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
