The following items were out of temperature in the only commercial cold holding unit. shredded cheese @60-65df, and salsas in ziplock bags @78-70df. Outside of the trailer near the hitch, there was a bus tub of raw beef at a temperature of 69df. These items must be held at 41df or below. PIC voluntarily discarded the items above to correct the violation.
