Inspector's notes

Observed several wet wiping cloths stored on the countertop. PIC stored the wet wiping cloths in the chlorine sanitizing solution. Advised PIC that all wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed Time/Temperature Control for Safety (TCS) foods cold holding in the reach in cooler and temping 50-55F, including shredded cheese and shredded lettuce. Per PIC, the TCS items were stored in the reach cooler 3 hours ago. PIC stated that they temped all of the food before leaving the commissary 3 hours ago, and all their food was 41 F or below. PIC stored TCS items in an ice bath, which brought the food items' temperature down to 40 F. Advised PIC that except during preparation, cooking, or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
