Observed employee washing and rinsing a serving spoon and then hanging it to dry. Informed PIC that all food contact surfaces must be sanitized properly after washing and rinsing. Instructed PIC to have employee set up the three-compartment sanitizer compartment and sanitize the spoon. PIC had employee set up sink and sanitize the spoon at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

Violation #33 is still needing to be corrected but establishment is in the process of getting a new unit. New unit should be ready by sometime next week. No TCS foods were observed being stored in cold holding unit needing to be repaired. Reinspection for cold holding unit will be conducted on or before 8/29/2024.

Reinspection will be conducted on or before 8/29/2024. Corrective Action: Correct prior to re-inspection.

Inspector's notes

In the small reach in cooler, observed: sour cream, hotdogs, egg salad, chicken salad, cows milk, cheese and Mac n Cheese having internal temperatures of 46-55*F. Person in charge states everything except for the hotdogs, chicken salad and the cheese had been in the unit for more than 4 hours. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held for more than 4 hours were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed the establishment not having hot water available at start of the inspection (measuring 84*F). Building staff was able to set up an Insta-hot unit on the three compartment sink of the coffee shop providing hot water of at least 100*F as a temporary solution for handwashing and dishwashing. Discussed the importance of having established hot water of at least 100*F throughout the establishment for proper sanitation. Reinspection will be conducted on or before 8/19/2024. Corrective Action: Correct prior to re-inspection.
