All cooking and food prep areas to be taped off for dust control protection. All staff to enter and exit through rear door only during construction. No new water demands, or installation and removal of walls. Replacing piping and flooring only, like for like. If replacement extends to cooking or warewashing areas, all food prepared and served will not require cooking and staff to utilize disposal plates and utensils. Observed two containers of pasta salad cooling with saran wrap tightly sealed around both containers. One of the containers was deep, PIC transferred both containers of pasta onto a sheet pan to help facilitate rapid cooling. Discussed the importance of air circulation and cooling parameters with PIC. The ambient temperature of the walk-in cooler was 38*F and the pasta was well within proper cooling parameters. Corrective Action: Corrected at time of inspection.

Observed mechanical warewashing machine run several cycles with dirty dishes, and produce a chlorine strength of less than 50ppm. Unit should produce a strength of at 50-100ppm every time for proper sanitation. Person in charge stated a service request has been placed, removed dishes, and placed in 3-compartment sink for manual sanitation. All dishes to be washed and sanitized in 3-compartmnet sink until mechanical warewashing unit can produce a consistent strength of 50-100ppm. PRIORITY VIOLATION-4-501.114 (A-E) - Priority: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Person in charge could not determine the reason for foods out of temperature, and mentioned foods had an internal temperature of 41*F within 2hrs prior to inspection.
