Observed sliced brie cheese in cold holding unit near grill with an internal temperature of 53*F. Person in charge stated cheese was prepared within one hour of inspection and was actively cooling. Foods actively cooling should be placed in units designed for rapid cooling. Person in charge had staff place cheese in neighboring reach-in refrigerator. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. Employee mentioned they put in a service request and will be serviced tomorrow. Establishment to provide work order invoice once completed. Out of order sign placed on unit and turned off. No temperature-controlled foods to be held in unit until unit can hold an ambient temperature of 41*F or below. Inspector's notes

The following products were observed with an internal temperature range of 45-48 *F while being cold held inside the make-line unit #5: Diced tomatoes (48*F), sliced tomatoes (45*F), Cooked sausage bits (48*F), cooked chicken (47*F), and chicken salad (48*F). The ambient temperature of the unit was 48*F according to the refrigerator thermometer inside the unit, this was confirmed with inspector's min/max thermometer. PIC voluntarily discarded TCS products mentioned above and submitted a workorder to get unit repaired. Per PIC, establishment will temporarily use time as a control until unit is repaired. PIC demonstrated knowledge of proper use of time as control for food safety. Discussed importance of closely monitoring cold holding temperatures.
