A container of lasagna observed with an internal temperature range of 75-110*F while being held inside the hot wells/ steam table. The lasagna was taken back to the main kitchen to be reheated to 165*F before hot holding. Discussed reheating and hot holding temperatures.

Pea salad, cut melons, yogurt, shredded cheddar in reach in refrigerator with an ambient temperature of 44-48*F. Person in charge could not determine the reason for foods out of temperature, and mentioned foods had an internal temperature of 41*F within 2hrs prior to inspection. All cold temperature controlled foods should be held at 41*F or below. Person in charge voluntarily discarded on own accord.
