Core-4-501.18, C: Warewashing Equipment, Clean Solutions.......At the three compartment sink, the center "clean" rinse sink appeared very sudsy. After rinsing a "just washed" sheet pan, the pan appeared covered in dish soap. The worker continued to sanitize the pan in the third vat. Ensure soap suds are completely rinsed off in the second step. It was pointed out that excessive detergent appeared to be used in the first wash sink, which may be affecting the condition of the rinse sink as well. The person in charge will retrain staff and check the calibration of the soap dispenser at the warewashing sink. Correct By: Correct Prior To Next Routine Inspection
