In self-service packaged hot food case, chicken nuggets and chicken wings with internal temperatures of 112*F-120*F. Per time sticker, TCS foods were in hot case <4 hours. Packaged chicken nuggets and packaged chicken wings were discarded for quality. Monitor hot holding case for proper temperature of packaged hot foods. Maintain TCS (time/ temperature control for food safety) foods at a hot holding temperature of 135*F or higher at all times. Corrective Action: Corrected at time of inspection.

Inspector's notes

In prep area, speed rack of prepared foods with internal temperatures of 58*F-61*F. Per manager, speed rack of TCS foods was removed from cold holding about 20 minutes. Instructed employee to move speed rack to walk in cooler to rapidly cool TCS foods back down to proper cold holding temperature. Recommended not removing entire speed rack of foods out of cold holding when preparing foods to place on speed rack. Also recommended limiting time foods are out of cold holding during preparation. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.

In deli prep area, packaged meatballs with internal temperature of 101*F. Per employee, the intent of the meatballs was to thaw, cool in package, and then serve in cold case. Employee stated meatballs were thawed in thermalizer and sitting on counter <30 minutes. Employee re-heated packaged meatballs to 135*F and served hot. Discussed proper cold and hot holding temperatures and thawing methods with employees. Maintain TCS (time temperature control for food safety) foods at a hot holding temperature of 135*F or above at all times. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff, a verification breakdown, which resulted in the violation.
