Inspector's notes

Observed first smaller section of walk-in fridge holding warmer temperature than other two units in alternative sections. Cooked chicken, beef, a soup mixture, sauces, and salsas were observed holding temps of 48-54° Fahrenheit. All TCS foods improperly cold held prepped outside appropriate timeframe were discarded by PIC at time of inspection. TCS foods improperly cold held but prepped within appropriate timeframe were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
