Observed soiled flooring next to some of the equipment on the main cook line and the ice machines. Observed dust accumulation onthe ceiling above the main cook line. Some walls have missing cove base tile. Repair all tile, clean all floors, walls and ceilings thoroughly. Corrective Action: Correct prior to next routine inspection.

Inspector's notes
Observed first smaller section of walk-in fridge holding warmer temperature than other two units in alternative sections. Cooked chicken, beef, a soup mixture, sauces, and salsas were observed holding temps of 48-54° Fahrenheit. All TCS foods improperly cold held prepped outside appropriate timeframe were discarded by PIC at time of inspection. TCS foods improperly cold held but prepped within appropriate timeframe were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to next routine inspection.
