Observed no testing strips for quat sanitizer at time of inspection. Test strips are required for any sanitizers used with food contact surfaces. A small supply of testing strips was provided by the inspector for temporary use. Provide quat sanitizer testing strips prior to reinspection on 5/8/26. Corrective Action: Correct prior to re-inspection.

Observed cheese sauce (118°F) in the hot holding unit below 135°F. All other items in the hot holding unit were above the required 135°F. Upon further investigation, it was determined the cheese sauce, which had been reheated on the stove an hour and a half before temperature measurement, had not reached the proper reheat temperature. Staff reheated the cheese sauce to the correct temperature, at time of inspection. Discussed reheating requirements with staff and provided guidance. Corrective Action: Corrected at time of inspection.

Observed opened ranch (63°F) and honey mustard (60°F) sitting out at room temperature near the cook line. The original containers say keep refrigerated. Staff stated the dressings were out for less than 4 hours and placed the containers in an ice bath in the prep table. Re-educated on cold holding requirements for Time Temperature Control for Safety foods and provided guidance. Correct By: Corrected At Time Of Inspection
